Earlier this year I discovered a vendor at our Friday market who sells bunches of mixed beets. Before, I was only familiar with red and yellow beets but these bunches also contained white & pink chioggia beets as well as all-white inside ones.

I’ve experimented with these beets quite a bit and so far I have used them as pizza topping, mixed them into pasta, and filled ravioli with them. I was hopeful the vendor would carry these mixed bunches well into late autumn because I wanted to incorporate them in some kind of soup or stew, which I finally did earlier this month. As expected, this turned out great, too.
